Wedding cakes traditionally are three tier fruit cakes with the bottom two layers being eaten on the day or given to guests and the top layer being saved for the christening of the couple’s first child.
These days there is much more variety in wedding cakes. They don’t have to be fruit cakes and you can opt for sponge. Sponge doesn’t last long so you will need a professional cake maker to make the cake the day before the wedding so it hasn’t dried out by the wedding day. This may limit the choice of decoration you have on the cake because there is only a short period of time to get it finished. Depending on the design your baker may be able to make part of the decoration before making the cake.
Fruit cakes are more flexibly because they last longer and you can have nearly any kind of decoration you choose on these types of cake.
You also don’t have to restrict yourself to icing. Many brides are now opting for a pure chocolate cake with chocolate decoration.
